Now that my coal miner is back to work, our meals have changed a bit. Lunches are super easy and wonderful, and suppers are things that can keep well until he gets home shortly after work. Some times if supper has something with rice or noodles in it i will cook fresh stuff for when my coal miner gets home.
Chili is a good left over meal, and it freezes really well too. When i make chili i never use a recipe, so this time i decided to use a recipe, then next time i would maybe tweak it a bit. I am not really talented at putting things together, so usually i follow the recipe right on. I am hoping for some spectacular chili today!
Things that go with chili-
-kraft dinner (yum.)
-hot dogs (i have never tries this but always want too)
If you can think of some other things i would love to know!
1 large onion- diced
1- 28 oz can of diced tomatoes
1- 15oz can of tomato sauce
2T chili powder
1 1/2tsp cumin powder
S and P
1- 15oz can beans (kidney or pinto)
1. Cook beef in a medium pan until brown.
2. Mix everything into a slow cooker- but beans and cheese. Cover, cook on low for 6-8 hours.
3. Stir in the beans, increase the heat to high. Cover, cook for 20 minutes more- or until slightly thickened. Serve with cheese.
Ok, i guess i did change a few things along the way!
I made my recipe smaller, but kept the spices full strength- not really thinking about it! And i do not like kidney beans so i put brown beans in. I was going to stick black beans in too, but it looked beany enough with the 3/4 can of brown. I also put my beans in 3 hours before we ate- i like it thick.
This chili was really good- it pays to follow a recipe!!
